Just in time for Valentine’s Day

One of the perks of working in the NICU is that families often drop off treats for staff. Darling Sonia brought these delicious items in last week and they disappeared in about 10 seconds. I asked her if I could post the recipe on the blog. Seems like a good sort of thing for Valentine’s Day. Quick, relatively easy and absolutely delicious. Thanks, Sonia, for sharing!

Oreo Truffles

· 1 package Double Stuffed Oreos or regular Oreos
· 1 package of cream cheese, softened
· Dipping chocolate (white chocolate or milk chocolate)

Chop Oreos up finely in a food processor. Save some of the finely crushed Oreos for garnish later and set it aside.

With food processer/ hands (or a spoon, I just think hands are faster), mash softened cream cheese and crushed Oreos until well combined.

Roll into 1″ balls or smaller and place on a wax covered cookie sheet. Put in freezer for 1 hour.

While balls are in freezer, melt dipping chocolate according to directions.

Pull the Oreo Truffles out of freezer, and dip into chocolate.

Dip each truffle individually and remove from dipping chocolate with fork or dipping utensil.

Garnish with crumbled Oreo crumbs immediately afterwards.

Let truffles set by refrigerating them for 10 to 15 minutes. Then serve (or, if you are as generous a soul as dear Sonia, bring them to your friendly neighbourhood NICU).
